A very simple cold noodle and tomato salad to serve alongside fish, chicken or whatever else you want. Why not try with this Asian style Roast Trout
1 person’s portion for noodle and tomato salad
- 1 serving of rice or glass noodles
- 6/7 cherry tomatoes
- 3/4 radishes
- 2 red chillies – finely sliced
- Handful of coriander leaves
- Tablespoon of sesame oil
- Teaspoon of soy sauce
- 1 spring onion
- Teaspoon rice wine vinegar
- 1 lime
Cook the noodles as the package says. When cooked, drain and rinse with cold water to remove the starch. In a large serving bowl add in the coriander, the chillies and the quartered tomatoes, and the radishes cut so you get super thin disks. The thinner they are the better it looks, as they go transparent, although you do lose the crunch. Add in the oil, soy sauce, rice wine vinegar and the juice of half a lime. Mix the bowl up together so that everything is nice and incorporated together. Sprinkle over spring onion and the coriander leaves and add salt and pepper to taste. If it still needs it, add the rest of the lime juice.
This is a super quick salad fit to accompany any asian style meal.
