Swigity Swag whats in your bag? Salted Caramel that’s what. The most delicious substance known to man, well one of them, I don’t want to say the most as I havn’t licked everything yet.
Salted caramel is one of those things that you see on a menu and no matter whats it’s with you will order it. Well guess what? It’s actually really easy to make, and if you make loads you can put it in the fridge and eat spoons of it whenever you want.
What you need:
- 200g white sugar
- 125ml water
- 100g of butter cubed up
- 100ml double cream
- 1stp flaked sea salt
- Get all of these things measured out as you will need them to hand
Pour the sugar in a wide-bottomed pan and pour in all the water making sure that all the sugar is covered. Set it over a medium heat and let all the sugar melt. Give it a quick stir and leave. Keep your peepers on the watery mixture as begins to brown. You want the mixture to turn an amber colour, you want it to turn a deep colour, but not really dark.
Take it off the heat and whisk in the butter until it has melted, then pour in the cream and the salt, and continue to whisk until you have a smooth sauce.
You’ve now made caramel. Pour it into a sterilised container and leave to cool. Give it a quick taste with a spoon, add a little more salt it you want.
It takes an annoyingly long time to cool. The sugar retains the heat amazingly well so it will be about 2 hours before it’s cool. However, it is delicious hot so if you got something you need caramelling, then drizzle it over and satisfy the cravings until next time. Once it’s cool, cover and put in the fridge ready for some midnight snacking.
