Basil is real good, not only is it a good name, it can also be used to make tasty stuff like pesto or this basil oil dressing. This dressing is real good for on salads, soups or poured over roast chicken. Use it like a pesto without any cheese or nuts. If you have got any of those vegans coming round, boom, hit them with this oil. Got any nut allergic people coming round, again boom, hit them with this. That’s smart cooking. Don’t actually hit people with the dressings though, that’s bad taste.
- Bunch of Basil
- ½ clove of garlic
- Virgin Olive Oil
In a clean food processor add the basil leaves from a whole bunch as well as half a clove of garlic. Begin to blend and pour in olive oil until you have a consistency you think looks like oil. This oil is super fragrant and is essentially pesto, without the cheese or pine nuts and can be used on salads, or as a dressing on other things.
